Buckwheat Granola

This go-to crunchy granola is delicious on its own as a snack, with yoghurt for breakfast, or as a smoothie bowl topper. Buckwheat kernels are a gluten-free source of amino acids, vitamins, minerals and antioxidants. The perfect choice when you're feeling snacky!

Ingredients

1 tsp vanilla

1/2 tsp cinnamon powder

Products

2 cups The Wholefood Pantry Buckwheat Kernels

1/3 cup The Wholefood Pantry Almonds, chopped

1/3 cup The Wholefood Pantry Cashews, chopped

1/3 cup The Wholefood Pantry Pepitas

1/3 cup The Wholefood Pantry Shredded Coconut

1/4 cup The Wholefood Pantry Maple Syrup

1/4 cup The Wholefood Pantry Coconut Oil

Pinch of The Wholefood Pantry Pink Himalayan Crystal Salt

1/3 cup The Wholefood Pantry Sultanas 


1. Soak the buckwheat kernels in a bowl of water for at least an hour or preferably overnight. Drain and rinse well.

2. Preheat the oven to 140 degrees.

3. Combine ingredients in a mixing bowl except for the sultanas.

4. Spread the mixture on a large baking tray, and bake on the bottom wrack for 30 mins, then take the tray out of the oven and stir it around with a spoon, then bake again for another 15-20 mins or until golden brown.

5. Take the tray out of the oven and stir through the sultanas. Allow to cool and store in an airtight container.
