3 frozen bananas
1/2 cup of coconut milk
3/4 cup of cacao butter for the mermaid scales (optional)
1/2 tsp vanilla extract
1 fresh banana - sliced
1 tsp dried rose petals
A dash of blue spirulina (optional)
3-4 tsp of Mermaid Latte (depending on desired strength)
2 tbsp The Wholefood Pantry Maple Syrup
1. Do this step in advance if you wish to make the mermaid scales: Melt the cacao butter in a saucepan over a gentle heat, add the maple syrup and vanilla extract. Pour into a bowl, and place in the fridge to cool. Don’t let it fully harden, but enough to make it pliable. Lay out a sheet of baking paper onto a baking tray, with a pallet knife or butter knife, scoop a little onto the knife, then smear onto the baking paper in a rustic ‘scale’ kind of shape. Repeat until cacao butter mixture is used up. It should harden on the bench but you can also pop them back in the fridge to harden quicker.
2. To make your smoothie bowl, add the banana, Mermaid Latte and coconut milk to a high powdered blender, blitz until combined. Scoop into a bowl. Top with toppings. Be a mermaid.
