Air Fryer Coconut Prawns

This dish was prawn to be the ultimate festive nibble. Crispy, golden, and bursting with flavour, juicy prawns are coated in a seasoned flour with added broth benefits for gut and immunity wellbeing. Crisped to perfection in the air fryer, these mouth-watering bites are an easy-to-make, crowd-pleasing appetiser.

  • 1.1 lb medium raw shrimp (thawed peeled, deveined, tails left on)
  • ½ cup plain flour
  • ½ tsp salt
  • 1 tbsp vegetable broth powder 
  • 1 tsp smoked paprika
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup unsweetened shredded coconut 
  • Olive oil spray (light coating for crisping)
  1. In one bowl, mix flour, salt, Vegetable Broth powder and smoked paprika. In another, beat eggs. In a third bowl, combine panko crumbs and shredded coconut.
  2. Pat shrimp dry. Dredge each shrimp in flour (shake off excess), dip in egg, then press into the coconut–panko mix so it sticks well. Try to use one hand for dry and one for wet to avoid crumbing your fingers. 
  3. Place shrimp in a single layer in the air fryer basket. Spray lightly with oil.
  4. Air fry at 400F for 7-9 minutes, turning halfway, until golden, crisp and cooked through.
  5. Serve with a dipping sauce of your choice.
