Chicken Kimchi Soba Noodle Bowl

Your gut called, and it wants you to make this for dinner. This bowl has all the good things: protein rich chicken, buckwheat soba noodles for extra fibre, and kimchi for fermented probiotics to help keep things balanced. Add a handful of greens and finish it with Lemon Paprika Chicken Bone Broth for a quick, savoury dinner that tastes unreal and leaves you feeling good.

  • Olive oil
  • 2 free-range chicken breasts, sliced
  • 5.3 oz buckwheat soba
  • 2-3 garlic cloves, finely diced
  • 1 bunch chinese broccoli, chopped
  • 2 tbsp Chicken Bone Broth Lemon Paprika
  • 2 tbsp soy sauce
  • 1 tsp honey
  • 1 tbsp sesame oil
  • 1 cup  kimchi
  • 1 tbsp toasted sesame seeds
  1. Heat olive oil in a pan and fry the chicken until cooked.   
  2. Meanwhile, cook the noodles according to the packet instructions, drain and set aside. 
  3. Add the garlic and chinese broccoli. Fry for a minute then add Chicken Bone Broth Lemon Paprika, soy sauce, sesame oil and honey and stir gently to combine. 
  4. Refresh the noodles by pouring over boiling water and drain immediately. 
  5. Serve the noodle into bowls, top with chicken, add ¼ cup kimchi to each bowl, and sprinkle chicken with toasted sesame seeds.
