Choc Banoffee Pie Cocktail

Almond Crumble (rim)

Chocolate sauce

Cocktail

  • ¼ cup maple syrup (plus extra for dipping)
  • 1 cup Baileys
  • 1 cup coconut milk
  • 2 bananas
  • 1 banana, sliced (for topping)
  • Maple syrup for topping
  1. Prepare the crumble mixture. In a medium saucepan add almonds, coconut sugar, 1 tsp of cinnamon and 1/2 tsp nutmeg in a fry pan over a medium heat until slightly golden and fragrant. Remove from heat and set aside. 
  2. Prepare chocolate sauce by combining melted coconut oil with Collagen Hot Chocolate in a small bowl and mix well. Set aside. 
  3. Blend Baileys, coconut milk, banana, Collagen Beauty Caramel,  1 tsp cinnamon and ½ tsp nutmeg in a blender until smooth. 
  4. Dip the top ½ inch of cocktail glass rim into a saucer of maple syrup, let the excess maple drip off, then dip into the crumble mixture to coat. 
  5. Spoon chocolate sauce into the glasses so it ripples around the glass.
  6. Pour in the cocktail mixture.
  7. Serve with sliced banana and a drizzle of maple syrup and enjoy.
