One Pot Rice Cooker Hainanese Chicken

One pot, zero stress, maximum flavour. Juicy chicken thighs meet fragrant jasmine rice, garlic and ginger in a magical rice cooker combo that basically does the hard work for you. Top with coriander, cucumber and a drizzle of chilli oil, and suddenly weeknight dinner feels like a little victory for you, and everyone at the table.

To serve

  • ½ bunch coriander
  • 2 cucumbers, sliced 
  • Drizzle of crispy chilli oil
  • 1 red chilli sliced (optional, for the spicy babes)
  1. Marinate the chicken thighs for 20 mins (up to overnight) in the soy, sesame oil and ginger. (Skip if you don’t have time, but the flavour is worth it).
  2. Rinse the rice until the water runs clear and add to the rice cooker
  3. Mix the water and Chicken Bone Broth Concentrate Natural Chicken together and add the garlic, ginger slices, sesame oil.
  4. Mix all the ingredients in the rice cooker to combine and cook on the ‘white rice setting’ approx 35 mins.
  5. Once done carefully remove the chicken and slice.
  6. Serve the rice onto 4 plates and top with chicken
  7. Add coriander and sliced cucumber, drizzle with chilli oil and sliced chilli (optional).
