10 Minute Chopped Greek Salad

Time to make friends with one of the easiest and most delicious side salads you’ll ever meet. 10 minutes (less if you’ve got some serious masterchef chopping skills) is all it takes to get a nutritional hit of protein, goodhit of healthy fats and vegetables, plus the extra veggie hit from Vegetable Broth. One serving of Vegetable broth is one serving of veggies, making it even easier to “eat the rainbow” and get your daily intake of vegetables in.

  • 1 tbsp Vegetable Broth Garden Veggie or 1tbsp Vegetable Broth Miso Ramen
  • 1 cup of iceberg lettuce
  • ½ large avocado
  • 1 tomato
  • 1 cucumber
  • ½ yellow capsicum
  • ½ red capsicum
  • ½ small red onion
  • 5-6 greek olives
  • 1 cup canned chickpeas
  • 1 heaped tbsp hummus
  • 1/2 cup feta, crumbled
  • Hand full of parsley
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  1. Dice all the vegetables and place in a bowl or salad plate along with the feta, chickpeas, olives and parsley.
  2. Combine Vegetable Broth, lemon juice and olive oil in a little dish and stir to combine.
  3. Drizzle over salad ingredients and toss to combine.
