For the chicken

  • 4 chicken breasts, schnitzel cut
  • ½ cup plain / all purpose flour
  • 2 eggs
  • 1 cup bread crumbs
  • ½ cup LSA mix (or any nuts blitzed)
  • 2 tbsp Chicken Bone Broth Powder Garden Herb
  • 1 tsp salt & pepper
  • Finishing salt
  • Olive oil spray

For the salad

  • 2 cups romaine lettuce, chopped 
  • 2 cups rocket / arugula
  • Fennel, shaved
  • Lemon juice
  • Olive oil
  • 1 cup parmesan cheese, grated
  1. Preheat the air fryer to 350 F
  2. Place  the flour, in one bowl, eggs in another, and bread crumbs, LSA mix, Chicken Bone Broth Powder Garden Herb, salt and pepper into a third bowl. 
  3. Place the chicken in the flour, then the egg (let excess drip), then the breadcrumb mixture. Then spray with olive oil on both sides.
  4. Add the chicken into the air fryer, cook for 17 minutes, flipping halfway. Ensure chicken is cooked through.
  5. Meanwhile, assemble the salad ingredients on plates. 
  6. Serve chicken and salad with extra lemon wedges.
