Apple Crumble Muffins

What’s better than apple crumble? Nuffin, unless it’s in muffin form. Spiced apple, creamy Greek yoghurt and a hit of cinnamon meet our Caramel Collagen Beauty for a soft, crunchy bite that tastes as good as it looks. It’s your new favourite dessert that’s also looking out for your skin.

For the muffin:

  • 2 cups plain flour  
  • 1½ tsp baking powder  
  • ½ tsp baking soda  
  • ½ tsp salt  
  • 1⁄2 tsp ground nutmeg  
  • 1 tsp ground cinnamon  
  • 1⁄4 tsp ground allspice  
  • 2 tbsp Collagen Beauty Caramel  
  • 2 large eggs  
  • ½ cup maple syrup  
  • ½ cup Greek yogurt (full fat)  
  • ½ cup butter, melted  
  • 1 tsp vanilla extract or paste  
  • 2 cups tinned apples (drained if very wet)
  • Muffin tray liners or baking paper 

For the crumble:

  • 1 cup oats
  • ½ cup plain flour
  • ½ cup butter, melted
  • 1 tsp vanilla extract or paste
  • ½ tsp cinnamon
  • 4 tbsp maple syrup
  • Pinch of salt
  1. Preheat oven to 428 °F. Line your muffin trays with baking paper.
  2. Line your muffin trays with liners or baking paper.
  3. Add all the muffin batter ingredients in a bowl, mix until well combined.
  4. Add the crumble ingredients together in a bowl and mix to combine.
  5. Add your muffin batter to the lined muffin tray. 
  6. Bake for 5 minutes (this will get the rise going) then turn heat down to 356 °F, top with the crumble mixture and bake for a further 25 minutes.
