Lay the crostini on a lined baking tray, brush with olive oil mixture. Place in the oven for 5 minutes (until very lightly golden and toasted).
Remove from the oven and lay over sliced brie and pear. Place back in the oven to bake for another 5 minutes, or until the brie is melted.
Remove from the oven and layer over prosciutto, drizzle with honey and scatter over thyme leaves. Serve immediately.
