As per our Christmas Cheers tradition, we have cocktail-afied one of our all time favourite desserts, Banoffee Pie, into a creamy, caramelly, peanut buttery cocktail of our boozy banana toffee dreams. You’ll go bananas for this one, promise.
Prepare the crumble mixture by toasting your almonds, coconut sugar, 1 tsp nutmeg and 2 tsp of cinnamon in a fry pan over a medium heat until slightly golden.
Prepare caramel sauce by mixing melted coconut oil with peanut butter, ¼ cup maple syrup and salt.
Dip top ½ inch of cocktail glass rim into a bowl of maple syrup, let the excess maple drip off, then dip into the crumble mixture.
Blend Baileys, coconut milk, banana, Collagen and remaining cinnamon and nutmeg.
Spoon caramel mixture into the glasses so it ripples around the glass.
Pour in the cocktail mixture.
