Banoffee Pie Cocktail

With Crumble Rim

As per our Christmas Cheers tradition, we have cocktail-afied one of our all time favourite desserts, Banoffee Pie, into a creamy, caramelly, peanut buttery cocktail of our boozy banana toffee dreams. You’ll go bananas for this one, promise.


3 tsp cinnamon

1 1/2 tsp nutmeg

2 tbsp peanut butter

1 cup Baileys

1 cup coconut milk

2 bananas


1 cup The Wholefood Pantry Almonds

3 tbsp The Wholefood Pantry Coconut Sugar

1/4 cup The Wholefood Pantry Maple Syrup (plus extra for dipping)

1/4 cup The Wholefood Pantry Coconut Oil

Pinch of The Wholefood Pantry Pink Himalayan Crystal Salt

  1. Prepare the crumble mixture by toasting your almonds, coconut sugar, 1 tsp nutmeg and 2 tsp of cinnamon in a fry pan over a medium heat until slightly golden. 
  2. Prepare caramel sauce by mixing melted coconut oil with peanut butter, 1/4 cup maple syrup and salt
  3. Dip top 1cm of cocktail glass rim into a bowl of maple syrup, let the excess maple drip off, then dip into the crumble mixture
  4. Blend Baileys, coconut milk, banana, and remaining cinnamon and nutmeg
  5. Spoon caramel mixture into the glasses so it ripples around the glass
  6. Pour in the cocktail mixture
