  • 1 tbsp Vegetable Broth Garden Veggie
  • 1 lemon
  • 1 pound fillet of Salmon (or 2 x 1/2 pound fillets)
  • Pinch of salt
  • Pinch of pepper
  • 1 tbsp honey
    ⅓ cup fresh chopped parsley
  • ¼ cup minced red onion
  • ⅓ cup dried cranberries
  • ¼ cup toasted pine nuts
  • Teaspoon of lemon zest
  • 2 tbsp olive oil
  • Juice of half a lemon
  • 1 tbsp fresh dill
  • 1 tsp honey
  1. Preheat oven to 320°F
  2. Line a baking tray/dish with slices of lemon
  3. Place the salmon on top and, season with salt, pepper, lemon juice and honey
  4. Place in oven for 20 minutes (adjust depending on the size of your salmon steak)
  5. Mix all the salsa ingredients together and bowl.
  6. Serve salmon with salsa on top
