Best Ever Banana Cake
This cake is one to go bananas over and a recipe staple that every family needs ready in the fridge for every occasion.   • 1 cup Thriving Family Smooth Vanilla
  • 3 eggs (or for vegan option: 3 tablespoons chia seeds mixed with 5 tablespoons water)
  • 4 ripe bananas
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup olive oil
  • 1/2 cup coconut sugar
  • 1.5 cups self-rising flour
  1. Preheat the oven to 350°F (180°C).
  2. In a large mixing bowl, combine the wet ingredients: Thriving Family Smooth Vanilla, eggs (or chia mixture), mashed bananas, vanilla extract, olive oil, and coconut sugar.
  3. Stir in the ground cinnamon.
  4. Gradually add the self-rising flour to the wet ingredients, mixing until just combined.
  5. Pour the batter into a greased or lined cake pan.
  6. Bake for approximately 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Allow the cake to cool slightly before serving. Enjoy!
