3 eggs or for vegan: 3 tablespoon chia mix with 5 tbsp water
4 bananas
1 tsp vanilla extract
1 tsp ground cinnamon
½ cup olive oil
½ cup coconut sugar
1.5 cup self raising flour
Method
Preheat the oven to 350°F (180°C).
In a large mixing bowl, combine the wet ingredients: Thriving Family Smooth Vanilla, eggs (or chia mixture), mashed bananas, vanilla extract, olive oil, and coconut sugar.
Stir in the ground cinnamon.
Gradually add the self-rising flour to the wet ingredients, mixing until just combined.
Pour the batter into a greased or lined cake pan.
Bake for approximately 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool slightly before serving. Enjoy!
