Chewy Peanut Butter Protein Balls

This recipe is perfect as a treat for school lunchboxes, as an afternoon pick-me-up to keep the kids happy before dinner or just any time they need a delicious treat. These peanut butter protein balls are a scrumptious combination of carbohydrate, protein and fat to nourish them and keep their energy levels up without the crash half an hour later. The fats and protein help to slow the release of sugar, which reduces the sugar spike that happens with many other treats. 

Peanut butter contains vitamin B6, which is known to reduce inflammation, and Magnesium, which helps with electrolyte balance and metabolism.

  • 2 tbsp Thriving Family Smooth Vanilla
  • ½ cup smooth peanut butter
  • 1 tbsp cold pressed coconut oil
  • 1 tbsp maple syrup
  • Pinch of pink Himalayan crystal salt 
  • 10  Deglet Nour dates
  1. Soak the dates in boiling water for 5 minutes to drain. 
  2. Combine all ingredients in a high-powered blender and blend until a smooth consistency forms.
  3. Roll into small kid bite-sized balls and place in the fridge to set.
