Chicken, Corn & Avocado Salad Jars

PANTRY ITEMS

  • 4 chicken breasts
  • olive oil
  • Chicken Bone Broth Concentrate Native Herbs
  • ¼ tsp cracked pepper
  • 2 cobs of corn, kernels sliced
  • 3.5 oz feta, crumbled
  • 2 cucumber, sliced into 'half moons'
  • 2 tbsp fresh dill
  • fresh basil
  • 2 cups iceberg lettuce, chopped
  • 2 cups baby spinach

Dressing

1. Preheat the oven to 350F. Lay out chicken breasts on a lined baking tray.

2. Drizzle with olive oil, then brush over chicken concentrate and crack over pepper. Bake for 20-25 minutes or until cooked through. Place on a plate to cool. 

3. Layer the salad ingredients into jars. Refrigerate until required

4. Add dressing ingredients together in a jar, shake to emulsify. 

5. When ready to serve, tip out a salad jar into a bowl, then pour over some of the dressing. Toss to combine.
