Our Chicken Noodle Soup is packed with wholesome ingredients, featuring a hearty mix of leek, carrots, and celery. We've stirred in our Chicken Bone Broth Concentrate too, a not-so-secret ingredient for boosting immunity, gut health, and supporting healthy bones. Topped with a sprinkle of parmesan (or nutritional yeast for our dairy-free friends), it's a bowlful of love that's guaranteed to make any day better.

PANTRY ITEMS

  • 1 tbsp olive oil
  • 1 leek, sliced
  • 2 large carrots, diced
  • 2 pieces of celery, sliced (reserve baby leaves)
  • 3 cloves of garlic, diced
  • 1 bunch of parsley, stems thinly diced (leaves reserved)
  • 1 tablespoon of thyme leaves
  • Either leftover roast chicken, 1/2 store-bought organic cooked chicken, or two cooked chicken breasts, shredded
  • 1 zucchini - lengths quartered and chopped
  • 3 tbsp Chicken Bone Broth Concentrate Native Herbs
  • 2 tbsp grated parmesan cheese (or nutritional yeast for dairy free) 
  • 6 1/2 - 8 1/2 cups of boiling water
  • 2 packs of ramen noodles
  • 1 tsp pepper

1. In a deep pot, gently fry together the leek, carrots, celery, garlic, parsley stems and thyme in olive oil until softened (about 5 mins). 

2. Add shredded chicken, zucchini, broth concentrate, parmesan cheese and water and simmer for 15 minutes.

3. Add in uncooked noodles, cook for another 3-5 minutes. Taste and season. Add water to top up soup if needed.

4. Taste and season. Stir in parsley leaves and baby celery leaves, then serve into bowls.
