Batter ingredients:

  • ½ cup Choc Whiz
  • ½ cup plant milk
  • 1 banana, mashed
  • 2 eggs
  • 3/4 cup gluten free flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp butter for frying

Optional toppings:

  • 2-3 tbsp dairy free yoghurt
  • 2-3 tbsp maple syrup
  • 5-6 strawberries cut in half
  1. Place all batter ingredients (starting with the liquids) together in a blender and blitz to combine.
  2. Heat the pan to a medium heat, add a little butter, let it sizzle, then dollop ⅓ cup of batter in the pan in three lots.
  3. When little bubbles start to appear (about 1 minute) flip the pikelets and cook for another 1 minute on the other side.
  4. Repeat with the remaining butter and batter until all cooked.
  5. Create a lovely little stack and dollop with yoghurt, strawberries and maple syrup.
