Christmas Coconut Clinkers


A healthy Christmas spin on a nostalgic treat. You might have to hide these ones from the kids if you want any left before putting them out on the table. Bite into a chocolate treat and make Christmas even more colourful and sweet with these coconut clinkers. Made with some superfood goodness from our Thriving Protein Vanilla and free from artificial colouring with our Matcha Latte and Velvet Latte. 

Ingredients

Matcha:

1 cup rolled oats

1/2 desiccated coconut

125 g organic apple sauce

2 medjool dates 


Velvet:

1 cup rolled oats

1/2 desiccated coconut

125 g fresh raspberries

2 medjool dates 

 

PRODUCTS

2 tbsp Velvet Latte or 3 tbsp Matcha Latte

2 servings (70 g) Thriving Protein Smooth Vanilla 

 

Coating: 

150 g The Wholefood Pantry Dairy Free Chocolate Chips

1 tbsp The Wholefood Pantry Coconut Oil


1. In a food processor, combine all the above ingredients and blend into a sticky mixture.

2. If the mixture is too dry, add in a few additional tablespoons of plant milk to help with blending.

3. Roll the mixture into 10 balls per flavour (about 1 large tablespoon each) and place on a flat tray. Place in the freezer for 15 minutes.

4. Melt the chocolate chips and coconut oil over a double boiler or in the microwave.

5. Coat the clinkers in a thin layer of the melted chocolate and return to the freezer or fridge to set.

6. Once set, these can be stored in a container in the fridge for up to 5 days or the freezer for 3 months.
