Christmas Lovers Salad
This Christmas Lovers salad got the green and red Christmas memo, it also pears perfectly with a Christmas ham or roast. Fresh mint, pear and pomegranate balance beautifully with walnuts, feta, spinach and rocket. Did we mention that this salad support your gut, bones and immunity thanks to Beef Bone Broth Concentrate?   • 1 tbsp Beef Bone Broth Concentrate
  • 3 cups rocket leaves
  • 3 cups baby spinach leaves
  • 1 bunch of mint leaves, separated
  • 2 pears (a pair of pears), finely sliced
  • ½ cup dried cranberries
  • 1 pomegranate, arils removed
  • 2 cups walnuts, toasted
  • ½ cup feta or goats cheese
  • Pinch of sea salt

For the dressing

  • ⅓ cup olive oil, extra virgin
  • 1 tbsp balsamic vinegar
  • ⅓ cup maple syrup
  • Juice of 1 blood orange (or other orange)
  • Black pepper
  1. First make the dressing by combining all dressing ingredients, including the Bone Broth into a bowl and whisk until emulsified.
  2. On a salad platter, lay out the rocket, baby spinach, most of the mint and pears. 
  3. Drizzle over the dressing then add walnuts, cheese, cranberries and pomegranate and some extra mint leaves, sprinkle over flaky sea salt 
  4. Serve soon after making otherwise the dressing will be too friendly (aka soggy) with all the leaves.
