1. Melt the dark Choc buttons over a double boiler (a bowl popped on top of a saucepan of simmering water) until melted.
2. Add the protein, collagen, salt and shredded coconut and mix to combine and coat the coconut.
3. On a sheet of baking paper pop about 1/2 a tablespoon dollops in little rows until you have used all the mixture. Flatten them down a little so that they are not too hard to bite when they set.
4. Pop into the fridge for about 30 mins to set.
Will keep in an airtight container in the fridge for a few weeks.
