Confetti Salad Jars

These Confetti Salad Jars will have your tastebuds saying yeehaw! Colourful, bursting with fresh flavour and super nutritious. These jars tick all the boxes with an extra boost from Vegetable Broth with 10 nourishing veggies and herbs. These jars also work well as a meal prep salad, simply add some extra leafy greens to bulk it up - an easy way to get back on the nutritional meals bandwagon.

For the Salad:

  • 2 cups chopped gem lettuce, chopped
  • 1 cup tomatoes, chopped (2 large tomatoes)
  • 14 oz canned black bean, rinsed and drained
  • 14 oz canned pinto beans, rinsed and drained
  • 1 can corn kernels 
  • 1 cucumber
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • ¼ cup pickled jalapeños, chopped
  • ⅓ cup chopped fresh coriander

For the Dressing:

  • ½ cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 & 1/2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 1 tbsp Vegetable Broth, Garden Veggie
  • Good pinch of salt & black pepper

To Serve:

  • 2 avocados (½ per serve)
  • Tortilla chips for serving (optional)
  1. Add chopped ingredients in satisfying layers into 4-5 jars or containers, add the lid and store until ready to eat.
  2. In a separate jar, add the dressing ingredients and give it a shake. 
  3. To serve, add a little of the dressing to your jar and give it a shake. Tip out into a bowl and top with ½ sliced avocado and some tortilla chips.

HOT TIP! This viral dip makes an even better meal prep salad. We've added lettuce to bulk it out. Make it your own with other ingredients you have on hand.
