Creamy Chicken Soup
You’re going to cluckin’ love this Creamy Chicken Soup! This soup-er simple dish is going to be your new fave. We’ve got fresh veggies, a juicy rotisserie chicken, and our Chicken Bone Broth Lemon & Paprika to add a delicious zing of flavour plus keep your immunity in check. Perfectly garnished and served with crusty bread, this is winter soul food. Easy to make and even easier to gulp down - soup-erb!

PANTRY ITEMS

  • 1 tbsp butter 
  • 1 tbsp olive oil
  • 1 large onion - diced
  • 2 medium carrots - diced
  • 3 pieces celery - diced
  • 1 bunch chopped fresh parsley (leaves and stems separate)
  • 3 cloves garlic - finely minced
  • 3 cups cooked chicken - (we use shredded rotisserie chicken)
  • 2 tbsp Chicken Bone Broth Concentrate Lemon & Paprika
  • 4 cups water
  • ½ lemon juiced
  • ½ cup cream (use oat cream if dairy free)
  • Baby spinach
  • 1 cup frozen peas
  • Sea salt 
  • Black pepper
  • Parmesan cheese
  • ¼ cup fresh tarragon, chopped
  • Fresh crusty bread

1. In a large pot over medium heat add onion, carrot, celery and parsley stems to olive oil and butter. 

2. Cook down until the onion in translucent then add garlic and cook for a further minute. Then add in your cooked shredded chicken.

3. Add bone broth, water, lemon juice and cream to the pot and bring to a simmer for 5 minutes. Add in spinach and peas.

4. Season, add cheese & herbs and serve with fresh crusty bread
