A Christmas fiesta is never complete without dirty corn! The perfect entrada to your Mexican feast, dirty corn is an easy, fun and delicious way to feed many hungry amigos. What really makes our recipe special is the cashew cream cheese as the base for all the other ingredients. Trust us on this one.

1. Char the corn cobs on an open flame if possible. You can use a cake rack on top of a gas stove, and slowly turn the corn with tongs until charred to your liking. Otherwise, char them on a really hot, dry frypan.

2. Make the cashew cream cheese with this recipe , and add 1 tbsp water to make it a bit creamier.

3. Cut the limes into wedges, and place them around the corn.

4. Top with the cashew cream cheese, then sprinkle the smoked paprika, fried shallots and nutritional savoury flakes on top.
