Espresso Caramel Overnight Oats

For a gooey, sweet and all-round delightful breakfast treat, give our Espresso Caramel Overnight Oats a try. Start your day with a blend of dates and chia seeds mixed in with a host of other nutritious ingredients to create a guilt-free breaky that will leave you feeling satisfied all morning.

Skip your morning coffee when these overnight oats are on the menu. The added shot of espresso will not only create a delicious flavour base, it’ll also give you the morning buzz that you need to go, go, GO!


1/2 cup rolled oats

3/4 cup plant milk

1 shot of espresso

1 cup boiling water

1 tsp vanilla extract

1 tbsp buckwheat kernels


1 tbsp Collagen Beauty

1 tbsp The Wholefood Pantry Cacao Nibs

1 cup The Wholefood Pantry Deglet Noir Dates

1 tbsp The Wholefood Pantry Chia Seeds

Pinch of The Wholefood Pantry Himalayan Crystal Salt

  1. Make a date paste by placing dates in a bowl and cover with boiling water for 10 minutes to soften.
  2. Then add dates and water to a high powered blender with a pinch of salt. Blend until smooth, scraping down sides of the blender as needed.
  3. Add a tbsp of water of the date paste to the bottom of a glass jar.
  4. Then add oats, chia, plant milk, espresso and vanilla. Give it a light stir to combine without mixing into the date paste underneath. Put a lid on the jar and store in the fridge overnight.
  5. When ready to serve, top with extra tbsp of date paste, 1 tbsp cacao nibs and a tbsp buckwheat kernels.
