Well bonjour and oui oui to this healthified French Toast with Brekkie Hero Chia Jam! Traditional jams usually have an incredible and terrifying amount of refined sugars present, this jam not only cuts out the high sugar content, but actually has loads of benefits thanks to real fresh fruit, chia seeds and Brekkie Hero which contains 18 bioavailable vitamins and minerals that the family won’t even know are there!
1 cup fresh or frozen fruit of choice (we used frozen raspberries)
2 tbsp water
2 tablespoons chia seeds
1 tbsp maple syrup
French Toast
¼ cup cream cheese
6 pieces of bread (of your choice)
2 large eggs
½ cup milk
1 tsp vanilla extract
Method
Chia Jam
Heat fruit and water in a small saucepan over medium-high heat, stirring occasionally until the fruit is heated through and begins to break down and bubble.
Use a potato masher to mash the fruit to an even consistency.
Stir in the chia seeds and lemon juice until combined. Remove from heat and let cool for 5 minutes.
Stir in Brekkie Hero.
Give the jam one final good stir. Then serve immediately, or transfer to a sealed container and refrigerate for up to 1 week or freeze for up to 3 months.

Melt the butter in a pan on medium heat.
Take the bread for a swim and dunk the bread into the mixture then remove, allow excess to drip into the bowl, then lay bread into the melted butter and cook for 2-3 minutes each side until nice and golden.
Repeat for remaining pieces of bread (approx 6).
Smear with cream cheese and spread over chia jam.
