Because contrary to belief, we know you can definitely make friends with salad, especially one that's as delicious and gut-friendly as this! Baby cos, kale, pumpkin and avocado are the ultimate combo, but what’s even better is the nourishing gut-goodness that you’ll receive with the added Veggie Broth.   • 1 tsp Vegetable Broth
  • 1 baby cos lettuce, chopped
  • 1 cup kale chopped
  • 1 avocado, peeled and cut lengthways
  • 1 cup pumpkin cut into small wedges
  • Drizzle of olive oil
  • ½ cup greek yoghurt
  • 1 clove of garlic

  1. Preheat oven to 350° F
  2. Place pumpkin wedges on a baking tray and drizzle with olive oil, then place in oven for 20-25 minutes (until caramelised)
  3. Once cooked allow to cool and mix in with kale and cos
  4. Place all ingredients for the dressing in a blender and then blitz until smooth.
  5. Pour over salad and toss to combine
  6. Add in avocado
