1 cup tofu cubes or sliced rotisserie chicken, cooked
½ cup carrot, sliced fine
400g noodles per jar
1 cup kale ribbons
6 tbsp coconut cream
4 tsp laksa curry paste
2 tsp grated ginger
2 tsp finely diced garlic
1 spring onion
4 tsp fish sauce
4 tsp maple syrup
½ cup mint or basil leaves
Juice of 1 lime
Boiling water (to fill the jar)
Method
Divide all ingredients between two jars (except for water).
Cover with a lid then place in the fridge until ready to use.
Add boiling water and stir through, when noodles are tender, eat it and enjoy.
