Mojito Jolly Shots

Boozy, bite-sized, and bursting with flavour, these shots are the ultimate crowd-pleasers, and so so easy to whip up!

  • 8 limes
  • ½ cup Gutsy Gummies Pine Lime
  • 2.7 fl oz water
  • 5.1 fl oz recently boiled water
  • 5.1 fl oz coconut rum 
  • 2 tbsp fresh mint leaves, finely sliced
  • ½ cup lime juice, freshly squeezed
  1. Halve the limes and carefully squeeze the juice, taking care not to piece the skin all the way through. Set juice aside.
  2. Using a small paring knife and a spoon or melon baller, carefully remove the lime flesh from the rind, taking care not to pierce the skin. Place them in a tray, cavity facing up
  3. In a measuring jug, mix room temperature water with Gutsy Gummies Pine Lime
  4. Then add 5.1 fl oz of recently boiled water, 5.1 fl oz of white rum, ½ cup lime juice, and the sliced mint, stir to combine
  5. Pour the mojito mixture into the limes and then set for 2 hours.
  6. To serve, cut in half to form wedges. Dig in.
