¾ cups coconut cream
1 pineapple, halved, flesh removed and chopped, reserve pineapple cavity (place in fridge).
Juice of 1 lime
Lime wedges to serve
1 cup of Malibu
2 tbsp Collagen Beauty™ Tropical
1. In a blender, add Collagen Beauty™ Tropical, Malibu, water, pineapple flesh, lime juice, blitz to combine.
2. Pour mixture into a dish and freeze overnight.
3. Use a fork to ‘rake’ the frozen mixture into a granita, then return to the freezer until ready to serve.
4. Serve the granita in glasses with a spoon or in the reserved pineapple for everyone to share, top with lime wedges.
