Raw Pistachio & Matcha Slice

Matcha and Pistachios are a matcha made in heaven - and not just because they are both green (although that does help make this delicious treat look so darn pretty). Matcha has been consumed traditionally for centuries for vitalising the mind & spirit. It contains powerful antioxidants and naturally contains a small amount of caffeine. Pistachios are also great mind-energy food. They are nutrient-dense, release energy slowly and are among the best plant-based sources of vitamin B6 which is essential for mental energy. Pistachios also contain magnesium, copper, potassium and phosphorus which all contribute to energy and brain function.

This delicious brain-food treat is such an easy throw together. It looks really beautiful and the pomegranate is the perfect contrast in colour and flavour!

  1. 1 serve Collagen Matcha Latte
  2. 2 medium medjool dates, pitted and soaked until soft
  3. 3 1/2 tablespoons Maple Syrup
  4. 2 1/2 tablespoons Coconut Oil
  5. 1/8 teaspoon Salt
  6. 1 cup raw pistachios, plus extra chopped
  7. 2 tablespoons almond milk
  8. 1 teaspoon vanilla extract
  9. Pomegranate
  10. Edible rose petals (optional)
  1. Process 1/2 cup raw pistachios, dates, 1/2 tablespoon maple syrup, and 1/2 tablespoon coconut oil in a food processor until it forms a sticky, crumbly mixture.
  2. Transfer the base mix into a small lined container and press down to make the base flat and even. Place in the freezer while working on the filling.
  3. For best results, ensure that the remaining ingredients are at room temperature. Blend the remaining ingredients (reserving your extra chopped pistachio, pomegranate, and rose petals) in a food processor until you achieve a smooth, uniform consistency.
  4. Pour the filling mixture on top of the base and spread out evenly.
  5. Sprinkle with chopped pistachios, pomegranate seeds, and edible rose petals.
  6. Allow to set by freezing for a minimum of 4 hours, or overnight.
  7. Remove from the freezer, slice, and enjoy!

NOTE: Keep any leftovers frozen.
