Smashed Avo and Chickpea Sandwich

  • 1 tbsp Vegetable Broth Garden Veggie
  • ½ can chickpeas (8 ounces)
  • ½ avocado
  • Lemon
  • Salt
  • Pepper
  • 1 shallot, finely diced
  • ½ garlic clove, grated
  • 1 tbsp fresh dill
  • 2 tbsp fresh parsley, chopped
  • Wholemeal, rye or sourdough bread 
  • ½ tbsp Mayonnaise (your choice of)
  • A few pieces of lettuce
  • 1 Cucumber, sliced
  1. In a bowl mash together chickpeas, avocado, lemon, salt, pepper, shallots, garlic, dill, parsley and vegetable broth with a fork
  2. Lay out your bread on a plate, cover one piece with mayonnaise, the other with the avo/chickpea mixture, layer over lettuce and cucumber. 
  3. Top with other piece (mayo side down) and then slice in half diagonally.
