Smokey Roast Carrot Broth Dip

This dip is so hearty and delicious. With the sweetness from the carrot, this flavour bomb is killer paired with cheeses, vegetable dippers or crackers alike. Bring your snacks to life with this delicious addition.

  1. Preheat oven to 400°F. Combine carrot chunks, cumin, salt, pepper, garlic, and olive oil in a roasting tray and cook until nicely roasted through (about 30 mins or so).
  2. While hot, place carrot into a heatproof blender, food processor, or Thermomix. Squeeze the roasted garlic in, add in tahini, smoked paprika, broth, and liquid smoke. Blitz until smooth, if needed add a little water a teaspoon at a time to soften.
  3. Season to taste. Refrigerate until needed - will keep for about 2-3 days.
