We’re channelling our inner Napoleon Dynamite because we’ve discovered the ultimate snack that’s both delicious and ridiculously easy to make. Made with freshly grated potatoes and a sprinkle of parmesan, these bad boys are fried to crispy perfection on the outside but keep that fluffy goodness on the inside. With a sprinkle of our Chicken Bone Broth, you’re also adding that extra bit of flavour and nutrition to seriously elevate this simple dish.

  • 3 large potatoes, peeled
  • 4 tbsp tapioca flour
  • 1 tbsp Chicken Bone Broth Homestyle Original
  • ¼ cup parmesan cheese grated
  • ½  tsp salt + extra to serve
  • ½ tsp pepper
  • 2 tbsp olive oil 
  • 2 tbsp parsley, finely chopped

1. Preheat oven to 390F. 

2. Parboil potatoes for about 8-9 minutes, drain and then grate potatoes with a grater. 

3. Add potatoes to a mixing bowl, then add tapioca, parmesan cheese, broth powder, salt and pepper, then mash to combine until a smooth consistency forms. Texture should be dry and pliable. 

4. On a chopping board, add spoonfuls of the potato mixture and form a long line about 2 cm thick, then cut into 'tater tots'

5. Carefully place on a lined baking tray, brush with olive oil all over, bake for 40 minutes. 

6. Sprinkle with salt and chopped parsley.
