Tofu Veggie Skewers


These Tofu vegetable skewers are a really easy and tasty vegetarian option to include on your barbeque or griddle. By now, we are all aware that Tofu is a great source of protein, but it also provides a good source of calcium, iron and magnesium. We also included our Garden Veggie Vegetable Broth in the marinade for added flavour and a source of B vitamins and Zinc.

Capsicum is a great source of vitamin C, and tomatoes contain essential vitamins, minerals and antioxidants, including the phytochemical lycopene which helps to protect the skin from UV radiation.


Ingredients

1 block of tofu, pressed and cut into cubes

Zucchini, sliced into ribbons

1 large Capsicum, cut into cubes

1 yellow capsicum, cut into cubes

Punnet cherry tomatoes

Juice of 1 lemon

2 tbsp Extra Virgin Olive Oil

2 cloves garlic, crushed

1 tbsp fresh oregano, chopped fine

1 tsp fresh thyme leaves

½ tsp cracked pepper

PRODUCTS

2 tbsp Vegetable Broth Garden Veggie

½ tsp The Wholefood Pantry Pink Himalayan Crystal Salt


  1. Make a marinade for your tofu by combining olive oil, lemon juice, garlic, oregano, thyme, vegetable broth, salt and pepper, add your tofu and allow to marinate for at least 1 hour. 
  2. Once your Tofu is finished marinating, place a griddle pan over a high heat. While your pan is warming up create your skewers by layering vegetables and tofu. Once your skewers are ready place on grill and rotate until the tofu is lovely and golden on each side.
  3. Serve with flatbreads and tzatziki.
