  • Olive oil (for sautéing)
  • 1 onion, diced
  • 3 cloves garlic, finely diced
  • 3 carrots, diced
  • 3 tbsp Veggie Hero
  • 12 eggs, whisked
  • ¼ cup tamari
  • 2 cups frozen peas
  • 3 spring onions, sliced
  • 5 cups cooked and cooled jasmine rice
  • 1 cup cheddar cheese (for topping)
  • Heat olive oil in a saucepan over medium heat.
  • Add the onion, garlic, and carrots to the pan. Sauté for 5 minutes until softened, then remove from the pan and set aside.
  • Preheat the oven to 350 F.
  • In a bowl, whisk 6 eggs with Veggie Hero. Pour into the pan and cook gently on medium heat until scrambled.
  • Add the spring onions, tamari, and peas to the scrambled eggs. Stir in the cooked vegetables and jasmine rice, mixing until well combined. Taste and adjust seasoning as needed.
  • Transfer the mixture to a baking tray lined with baking paper.
  • In another bowl, whisk the remaining 6 eggs and pour over the rice mixture, stirring to combine.
  • Sprinkle with the cheddar cheese and bake for 25–30 minutes, or until golden brown and set.
  • Allow to cool before slicing into portions. Store in the fridge, ready for lunchboxes!
