2 cups mixed berries of your choice ( we used strawberries, raspberries and blueberries), plus extra for serving
1 large banana
¼ cup The Wholefood Pantry Chia Seeds
2 tbsp Thriving Protein Smooth Vanilla
1 tbsp The Wholefood Pantry Coconut Oil
Add mixed berries and chia seeds to your blender and whizz until combined.
Mash eggs and banana together, once combined add 2 tbsp of Thriving Protein Smooth Vanilla and stir until smooth.
Heat your pan over medium high heat and melt 1 tbsp coconut oil. Scoop the desired amount of batter into prepared pan and allow to cook until bubbles form before flipping.
To serve, stack your desired amount of pancakes onto a plate, top with Coconut yoghurt, berry jam, fresh berries and a drizzle of maple syrup.
