These pancakes are the perfect recipe to use up the ripe bananas sitting in your fruit bowl that you forgot about. With added protein, these delicious treats will leave you feeling both nourished and satisfied.
2 cups mixed berries of your choice (we used strawberries, raspberries and blueberries), plus extra for serving
2 eggs
1 large banana
Coconut Yoghurt
Maple syrup
¼ cup Chia Seeds
1 tbsp Coconut Oil
Method
Add mixed berries and chia seeds to your blender and whizz until combined
Mash the eggs and banana together, once combined add 2 tbsp Thriving Family Smooth Vanilla and stir until smooth
Heat your pan over medium to high heat and melt 1 tbsp coconut oil. Scoop the desired amount of batter into the prepared pan and allow to cook until bubbles form before flipping.
To serve, stack your desired amount of pancakes on to a plate, top with coconut yoghurt, berry jam, fresh berries and a drizzle of maple syrup.
