Chicken Satay Salad

  • 1 tbsp Chicken Bone Broth Miso Ramen
  • 1/2 tbsp tamari
  • 1 tbsp lime 
  • 1 tbsp peanut butter, heated slightly
  • 1/2 tbsp maple syrup
  • 1 tsp sesame oil 
  • 1 tbsp ginger grated
  • ¼ cup water
  • 1 cup carrot, grated
  • 1 cup cucumber, grated 
  • 1 cup zucchini, grated  
  • 1 cup mint leaves
  • 1 cup coriander leaves
  • 1 cup red cabbage, finely sliced 
  • 2 cups chicken, shredded
  • 1 cup rice noodles, cooked
  • 1/2 cup kimchi
  • 2 tsp black sesame seeds
  • 2 tsp white sesame seeds
  • 1/4 cup peanuts

1. Combine Chicken Bone Broth Miso Ramen, tamari, lime, peanut butter, maple syrup, sesame oil, water and ginger to a dish. Stir to combine.

2. Add carrot, cucumber, zucchini, mint, coriander, red cabbage, chicken, rice noodles and kimchi.

3. Drizzle over satay dressing.

4. Top with sesame seeds, peanuts and chilli.
