Ingredients

PANTRY ITEMS

1 kg new potatoes

1 cup mixed soft-leaf herbs, we used basil, oregano and dill

½ cup pine nuts, toasted

3 tbsp grated parmesan

½ tsp salt

1 garlic clove

Juice of half a lemon

¼ cup olive oil

Zest of 1 lemon

2 heaped tbsp mayonnaise (your choice of)

Salt and pepper

Rocket

Extra herbs

1 tbsp Vegetable Broth Garden Veggie

 


  1. Cut the potatoes in half, Place in a pot of salted water, bring to the boil for 15 minutes
  2. Preheat oven to 210c
  3. Place the drained potatoes in a lined baking tray, season with salt, pepper and drizzle with olive oil, bake for 35 minutes, turning and lightly pressing down on the potatoes with a potato masher every 10 minutes, cook until golden and crispy. Let them cool for a couple of minutes
  4. Meanwhile, make the pesto: Add the herbs, ⅔ of pine nuts, parmesan, broth powder lemon juice, garlic and salt in a food processor. Blend until loosely chopped, then slowly pour in the olive oil until it and turns into pesto consistency
  5. Assemble the salad: Add potatoes to a large bowl and add mayonnaise, pesto, rocket, lemon zest and a good pinch of salt and pepper
  6. Gently toss to combine.
  7. Top with extra rocket, herbs and toasted pine nuts
