  • 2 tbsp Vegetable Broth Garden Veggie
  • 2 tsp Veggie Hero
  • 11 ounces grated pumpkin
  • ½ red onion diced
  • 7 ounces canned chickpeas, drained
  • 2 eggs
  • 2 tbsp flour (or GF flour alternative)
  • 0.5 ounces freshly grated parmesan cheese
  • 1 tbsp olive oil

  1. Grate the raw pumpkin and pat dry.
  2. Grate the parmesan cheese and dice the onion.
  3. Smash the chickpea's with a potato masher or fork.
  4. Place the pumpkin, smashed chickpeas,  onion, eggs, parmesan cheese, flour, broth powder and veggie hero powder into a bowl. 
  5. Mix well to combine 
  6. Add the olive oil onto a medium heat pan.
  7. Spoon out individual portions and fry on both sides until brown
  8. Move to a paper towel lined plate and allow to cool for a few minutes before eating.
