15 Minute Italian Sausage Tomato Gnocchi

Gnocch, gnocch, who’s there? Your new favourite 15 minute dinner. Soft gnocchi, fennel spiked Italian sausage and semi dried tomatoes cosy up in a creamy tomato rich sauce that tastes like it took way longer than it did. With the addition of Chicken Bone Broth, you get extra depth and balance, making this an easy midweek dinner you will come back to again and again.

  • 1 tbsp olive oil
  • 1.1 lb Italian sausages (we used pork and fennel)
  • 21 oz Fresh gnocchi
  • ½ cup semi dried tomatoes
  • 1 tbsp Chicken Bone Broth Concentrate Natural Chicken
  • 2 tbsp tomato paste
  • 1.5 cups water
  • ½  cup lemon juice
  • ¼ tsp pepper
  • ½  cup parmesan, grated
  • ¾  cup cream
  • 1 ball of burrata
  • Hand full of basil leaves
  1. Remove the sausage meat from the skin. In a pan on medium heat add olive oil, then add sausage meat. Fry until caramelised and cooked through (about 7-8 minutes).
  2. Meanwhile add semi dried tomatoes, Chicken Bone Broth Concentrate Natural Chicken, tomato paste, water, lemon juice and pepper to a blender or food processor, blitz to combine.
  3. Add the tomato mixture to the sausages, along with the cream and parmesan. Cook for 2-3 minutes, then add the gnocchi, cook for another 3-4 minutes. Remove from heat.
  4. Tear open the burrata and add dollops of it around the pan. Scatter over semi dried toms,  basil and cracked pepper.
