Dressing

Salad

  • 4 cups baby arugula
  • 4 apples, sliced 
  • 1/2 cup pomegranate seeds
  • 2 cups pecans
  1. Combine the dressing ingredients in a jar with a lid and shake to emulsify.
  2. In a salad bowl or on a platter, layer over rocket, sliced apple, pecans and pomegranate. 
  3. When ready to serve, drizzle over dressing, toss to combine.
