Apple Pie Overnight Oats

Who said you can’t eat dessert for breakfast? We’re all for a ‘healthified’ dessert for breakfast here at Nutra. Cinnamon, maple, apple and oats are always a winning combination, plus with Collagen Beauty for an added glow, you’re really winning! Whether you feel comfortable in a kitchen or are a complete novice, there’s a meal prep version, or a little fancier option just for you with this Apple Pie Overnight Oats.

  • 2 tbsp Collagen Beauty 
  • 1 cup oats
  • 1/2 cups shredded coconut 
  • 3 tbsp chia seeds
  • 1 apple diced
  • 1 tsp vanilla extract or paste
  • 1.5 cups plant milk 
  • 1 tsp cinnamon 
  • 1 tbsp almond butter 
  • 1 tbsp maple syrup
  • 1 tbsp greek yoghurt 

Optional fancy version: 

  • 1 apple peeled and diced
  • 1 tbsp butter
  • 1 tbsp maple
  • 1 tsp cinnamon
  • Pinch of salt
  1. Combine oats, shredded coconut, Collagen Beauty, chia seeds, vanilla paste, apple, milk, maple and cinnamon in a container, stir through. 
  2. Place in the fridge overnight or at least 6 hours.
  3. Make it fancy: place butter and peeled apples in a pot on medium heat, stir and allow to become golden brown, about 5 minutes. 
  4. Add the maple, cinnamon and salt and cook for another 3-5 minutes or until softened.
