  • 3 large ripe bananas (about 11.6 oz peeled)
  • 2 eggs
  • ⅔ cup Greek yoghurt
  • ¼ cup mild extra virgin olive oil
  • ¼ cup brown sugar
  • 1 tsp vanilla extract
  • 2.8 oz Collagen Beauty Unflavoured
  • 1¼ cups plain flour
  • ½ cup almond meal
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 cup walnuts, roughly chopped
  • ½ cup dark chocolate chips
  • Flakey salt

Topping:

  • 1.5 cups Greek Yoghurt (vanilla or plain)
  • ¼ cup dark chocolate chips
  • 1 banana, peeled and sliced
  • ⅓ cup walnuts
  • Ground cinnamon
  1. Preheat oven to 320°F. Line a 8¼ × 4⅓-inch loaf pan.
  2. Mash the bananas until mostly smooth.
  3. Whisk together banana, eggs, Greek yogurt, olive oil, brown sugar and vanilla.
  4. Then add the Collagen Beauty Unflavoured, flour, almond meal, baking powder, baking soda, cinnamon and salt.
  5. Gently fold the dry ingredients into the wet ingredients until just combined.
  6. Fold through the walnuts and chocolate chips.
  7. Transfer to the loaf tin (top with extra chocolate chips) and bake for approximately 55–65 minutes, or until a skewer comes out clean or with a few moist crumbs.
  8. Cool in the tin.
  9. Cover the cake with Greek yogurt, sliced banana, walnuts, chocolate chips and a dusting of cinnamon.
