1. Preheat oven to 350°F. Grease a 9.5-inch pie dish, skillet, or baking dish.
2. Place chopped spinach in a colander, sprinkle with salt, and let sit for 10 minutes. Transfer to a clean towel and wring dry.
3. Prepare beef filling: cook ground beef in a skillet over medium-high heat, breaking it up, until browned and liquid evaporates. Transfer to a plate.
4. Heat olive oil in the skillet. Sauté onion for 3–4 minutes until soft. Add garlic, cumin, coriander, paprika, cinnamon, and red pepper flakes, cooking for 30 seconds. Stir in tomato paste and Beef Bone Broth concentrate. Cook for 1 minute, then stir in black pepper, parsley, and ground beef. Remove from heat to cool slightly (mixture should remain dry).
5. In a bowl, combine spinach, feta, ricotta, egg, green onions, lemon zest, and herbs. Season with black pepper.
6. Assemble pie: layer 1 sheet of phyllo into dish with overhang and brush with melted butter. Repeat with 5–6 sheets, rotating slightly.
7. Spread spinach and feta mixture across the base, then spoon spiced beef evenly over top in 2 distinct layers.
8. Top filling with 6–8 phyllo sheets, brushing butter between each layer.
9. Fold overhanging phyllo loosely over top and brush generously with butter.
10. Score top layers into segments and sprinkle with sesame seeds.
11. Bake for 30–35 minutes until deeply golden brown and crisp.
12. Rest for 10 minutes before slicing. Serve with lemon wedges and Greek yogurt or tzatziki.
