Life's what you bake it, and when you make this it's pretty good! Prepped in just 15 minutes and ready in 45, this hearty bake combines savoury beef, tender zucchini and bubbling cheese for a dinner the whole family will happily dig into. The leftovers are just as good the next day, if there are any left.

  • 17.6 oz zucchinis, sliced
  • 3 cloves garlic, diced
  • 1 small onion, diced
  • 17.6 oz beef mince
  • 8.8 oz Passata
  • 1 tbsp tomato paste
  • 1 tbsp Beef Bone Broth Garden Herb
  • 1 tbsp rosemary, finely chopped
  • 1 tsp dried oregano
  • 1.5 cups Shredded mozzarella cheese
  • 8.8 oz cottage cheese

1. Preheat your oven to 392°F. Slice zucchini into rounds, place on a paper towel and sprinkle over salt.

2. Heat a saucepan on medium low heat, add olive oil and onion sauté lightly for 3-5 minutes, then add garlic, cook for 2-3 minutes. 

3. Turn the heat to high, add the beef mince, breaking up into chunks. Add salt and pepper, and cook until browned. 

Pat down zucchini with a paper towel to draw out extra moisture. 

4. To a baking dish, add the zucchini, beef mince passata, rosemary, oregano, Beef Bone Broth Garden Herb, salt and pepper. Mix to combine. 

5. Spoon over cottage cheese, then sprinkle over mozzarella  cheese. 

6. Bake for 20-30 minutes, until the cheese is golden brown.
