Honey Lemon Baked Chicken

PANTRY ITEMS

6 chicken thigh pieces

3 cloves garlic, chopped

2 tbsp Chicken Bone Broth Concentrate Lemon Paprika

1 tsp ground coriander

1 tsp honey

½ tsp chilli powder

4 tbsp olive oil 

pinch of pepper

1 avocado

½ cup basil

2 tbsp chives + extra for garnish

2 tbsp dill, fresh + extra for garnish

1 clove garlic

½ lemon

½ cup Greek yoghurt

2 cups baby spinach

3.5 oz feta, crumbled

Pink pickled onions

1. Combine chicken, garlic, chicken concentrate, honey, ground coriander and chilli powder in a bowl. 

2. Fry both sides of the chicken in a hot pan for 1 minute or until golden using 1 tbsp olive oil. 

3. Cook Chicken in the oven at 350F for 30 mins.

4. Meanwhile, combine ½ an avocado, basil, dill, chives, garlic, ⅓ cup of olive oil, lemon juice, yoghurt, ½ cup baby spinach and a pinch of salt in a blender. Blend until smooth and creamy.

5. Serve chicken on a plate or platter, drizzle over pan juices and Green Goddess sauce, top with pink pickled onions and garnish with herbs. 

6. Serve with remaining baby spinach, sliced avocado & feta.
