Prepare the shot glasses for serving before making the jello mix. Lightly coat the inside of the shot glass with oil (to help prevent sticking).
Dip the shot glass rims in agave syrup and then into the desiccated coconut - ready for serving.
Heat pineapple juice on a pan
Once once the pineapple juice is hot (but before it starts simmering), add the coconut cream and keep mixing on the heat.
Once the coconut and pineapple are hot, add the gutsy gummies and stir until fully dissolved
Add the coconut rum and stir.
Pour into the shot glasses, then transfer into the fridge to set.
