Chicken: 

  • 2 tbsp Chicken Bone Broth Concentrate Lemon Paprika
  • 8 Chicken thighs
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp roasted red pepper paste
  • 6 garlic cloves, diced
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 2 tbsp fresh parsley
  • Juice of ½ lemon
  • 1 tbsp Honey

Potatoes:

  • 1 sweet potato, cubed
  • Baby potato
  • 1-2 tbsp olive oil
  • 1 cup pitted Green olives
  • Salt

Salad:

  • ½ large Cucumber
  • 1 cherry Tomato
  • 1 Parsley bunch (small)
  • Olive oil
  • Lemon juice
  • Salt
  1. Combine all ingredients in the Chicken section and mix with the chicken. Set aside for 30 mins if possible (you could do overnight if you are really organized). If not possible, just set aside while you prep the potatoes and salad.
  2. Preheat oven to 350°F.
  3. Add sweet potato, potatoes, and olives with olive oil and salt in a large roasting pan.
  4. Assemble salad and pop in the fridge to let all the flavors mingle.
  5. Grab the chicken and lay the thighs out on top of the potatoes.
  6. Into the oven for 20 mins to roast, then flip the chicken and back in for another 20 mins.
  7. Drizzle honey on the chicken to serve alongside the fresh salad and enjoy.
