When your dessert and your cocktail has a Christmas baby on a tropical island, it is this Merry Matcha Affogato. If you didn’t like Matcha before, once you take a bite of this tasty green coconutty concoction, you’ll be turning into the grinch who stole all the Merry Matcha Affogatos.

  • 1 heaped tbsp Collagen Matcha Latte
  • Dairy-Free Coconut Ice Cream
  • 1 fluid ounce Malibu Coconut Rum
  • Squeeze of Lime Juice
  • ⅓ cup Coconut Cream
  1. Whisk the Matcha Latte, malibu and coconut cream and lime until combined.
  2. Add a big scoop (or two or three) of ice cream into a glass.
  3. Pour matcha mixture over ice cream.
  4. Top with a cherry.
