This bowl is tossing things up very nicely! Silky green tea noodles are paired with crisp veggies and a creamy miso-tahini dressing, with Vegetable Concentrate rounding out the umami flavour while bringing plant-based nutrients. It’s fresh, fast, and made for easy, no-fuss meals.

Dressing

  • 1 tsp fresh ginger
  • 1 tbsp white miso
  • ¼ cup tahini
  • 2 tsp Vegetable Concentrate
  • 3 tbsp mirin
  • 2-3 tbsp water (to thin out the sauce)

Salad

  • 9 oz green tea noodles
  • 2 cups green beans
  • 1 cup edamame
  • 1 cucumber, diced
  • ¼ cup pickled ginger
  • 1 avocado, sliced
  • 2 cups arugula
  • Sesame seeds 
  • Seaweed salad (Optional)
  1. Combine all the dressing ingredients together in a bowl. 
  2. Cook the noodles according to packet instructions, but undercooking by about a minute.
  3. Drain noodles under cold water.
  4. Add cooked, cooled noodles to a large salad
  5. Add all ingredients to a salad bowl except for the avocado and the seaweed salad. Pour over dressing, toss to combine. 
  6. Serve into bowls and top with avo and seaweed salad.
